Liver-Friendly Detox Soup

Ingredients:

  • 1 large beetroot, peeled and diced
  • 2 medium carrots, peeled and sliced
  • 1 cup kale or spinach (high in antioxidants)
  • 1 clove garlic, minced (anti-inflammatory)
  • 1 medium onion, diced
  • 1 lemon (for fresh juice)
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon olive oil
  • 4 cups vegetable broth (or water)
  • 1 teaspoon turmeric (anti-inflammatory)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Prepare the vegetables:
    • Peel and dice the beetroot, carrots, and onions.
    • Mince the garlic and grate the ginger.
  2. Sauté the aromatics:
    • In a large pot, heat the olive oil over medium heat.
    • Add the onions and garlic, sauté until soft and translucent, about 3 minutes.
  3. Add the vegetables:
    • Stir in the diced beetroot, carrots, ginger, and turmeric. Cook for 5 minutes, allowing the flavors to meld.
  4. Simmer:
    • Pour in the vegetable broth (or water), bring to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the vegetables are tender.
  5. Blend:
    • Use an immersion blender to blend the soup to your desired consistency. If you like it chunkier, blend just a little. For a smoother consistency, blend more thoroughly.
  6. Season:
    • Add salt and pepper to taste, and squeeze in the juice of one lemon.
  7. Serve:
    • Ladle the soup into bowls, garnish with fresh parsley, and enjoy!
