Broccoli and Lentil Power Soup

Ingredients:

  • 1 large head of broccoli, chopped into florets
  • 1 cup green lentils, rinsed
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp freshly grated ginger (optional)
  • 6 cups vegetable broth (low-sodium)
  • Juice of 1 lemon
  • Fresh parsley or cilantro for garnish
  • Salt and pepper to taste

Instructions:

  1. Prepare the base:
    • Heat olive oil in a large pot over medium heat.
    • Add diced onion, garlic, carrots, and celery. Sauté for 5-7 minutes until the vegetables soften.
  2. Add spices:
    • Stir in turmeric, cumin, and paprika, cooking for another minute to release the flavors.
  3. Cook the lentils:
