Anti-Inflammatory Soup for Joint and Bone Health

Ingredients:

  • 2 tbsp olive oil (anti-inflammatory, rich in antioxidants)
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced (anti-inflammatory and antioxidant properties)
  • 2 carrots, chopped (rich in beta-carotene, good for joint health)
  • 2 celery stalks, chopped (contains antioxidants)
  • 1 cup sweet potatoes, diced (rich in vitamins A and C, good for inflammation)
  • 1 cup kale or spinach (rich in calcium and vitamin K, supports bone health)
  • 1-inch fresh ginger, grated (anti-inflammatory and helps reduce pain)
  • 1 tsp turmeric powder (known for its powerful anti-inflammatory properties)
  • 1/2 tsp black pepper (boosts the absorption of turmeric)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 6 cups vegetable broth (homemade if possible, or low-sodium store-bought)
  • 1/2 cup cooked quinoa or brown rice (optional for added texture and nutrients)
  • Juice of 1 lemon (vitamin C for joint and immune support)
  • Salt to taste

Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and sauté for 3-4 minutes until softened.
  3. Stir in the garlic, carrots, and celery, cooking for another 5 minutes.
  4. Add the sweet potatoes, ginger, turmeric, cumin, coriander, and black pepper. Stir to coat the vegetables with the spices.
  5. Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and simmer for 20 minutes until the vegetables are tender.
  6. Add the kale or spinach in the last 5 minutes of cooking.
  7. If using, stir in the cooked quinoa or brown rice for extra heartiness.
  8. Once done, squeeze the lemon juice into the soup and season with salt to taste.
  9. Serve hot, garnished with a drizzle of olive oil or fresh herbs if desired.
