Ingredients:
- 1 cup oatmeal (90g)
- 50g dried cranberries
- Zest of 1 lemon
- 1/4 cup walnuts, chopped (30g)
- 1/4 cup dates, chopped (35g)
- 1 egg
- 2 tablespoons butter, melted (30g)
Instructions:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix dry ingredients: In a medium bowl, combine the oatmeal, cranberries, lemon zest, walnuts, and chopped dates. Stir well to evenly distribute the ingredients.
- Prepare wet ingredients: In a separate bowl, whisk the egg and melted butter together until smooth.
- Combine: Pour the wet ingredients into the dry mixture. Stir until the mixture is well combined and the oats are fully coated.
- Form cookies: Using a spoon, scoop small amounts of the dough and form into balls. Place them onto the prepared baking sheet and gently flatten with your fingers or the back of a spoon.
- Bake: Bake for about 12-15 minutes, or until the cookies are golden brown and firm to the touch.
- Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
