- 1 cup oatmeal (90g)
- 50g dried cranberries
- Zest of 1 lemon
- 1/4 cup walnuts, chopped (30g)
- 1/4 cup dates, chopped (35g)
- 1 egg
- 2 tablespoons butter, melted (30g)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon baking soda
- A pinch of salt
- Optional: 1 tablespoon honey or maple syrup for extra sweetness
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the oatmeal, cranberries, walnuts, dates, and lemon zest.
- In a separate small bowl, whisk together the egg, melted butter, vanilla extract, and optional honey/maple syrup.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Add the baking soda and a pinch of salt to the mixture and stir again.
- Use a spoon or cookie scoop to drop the dough onto the baking sheet, forming cookies about 1.5 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown and the cookies are firm to the touch.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
