Tasty Milk Chocolate Coconut No-Bake Slice

Ingredients:

  • 200g (7 oz) plain digestive biscuits (or graham crackers), crushed
  • 100g (3.5 oz) unsweetened desiccated coconut, plus extra for topping
  • 150g (5.3 oz) milk chocolate, chopped
  • 100g (3.5 oz) sweetened condensed milk
  • 50g (1.75 oz) unsalted butter, melted
  • 1 tsp vanilla extract

Instructions:

  1. Prepare the Base:
    • In a large mixing bowl, combine the crushed digestive biscuits and unsweetened desiccated coconut. Mix well.
  2. Melt the Chocolate:
    • In a microwave-safe bowl, melt the chopped milk chocolate. Heat in 20-30 second intervals, stirring in between until completely melted and smooth.
  3. Combine Ingredients:
    • Add the melted chocolate, sweetened condensed milk, melted butter, and vanilla extract to the biscuit and coconut mixture. Stir until everything is well combined.
  4. Set the Slice:
    • Line a square baking dish (approximately 8×8 inches) with parchment paper, leaving some overhang for easy removal later.
    • Pour the mixture into the prepared dish and press down firmly to create an even layer.
  5. Add the Topping:
    • Sprinkle extra desiccated coconut over the top of the slice, pressing it gently into the surface.
  6. Chill:
    • Place the slice in the refrigerator for at least 2 hours, or until it is firm and set.
  7. Serve:
    • Once set, lift the slice out of the dish using the parchment paper overhang. Cut into squares or bars.
