Tuna Egg Muffins

A healthy, high-protein snack or breakfast option.

Ingredients:

  • 1 can of tuna (drained)
  • 4 large eggs
  • 1/4 cup grated cheese (optional)
  • 1/4 cup diced onions
  • 1/4 cup diced bell peppers
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a muffin tin or line with paper cups.
  2. Prepare the mix: In a large bowl, beat the eggs. Add the drained tuna, diced onions, bell peppers, cheese (if using), garlic powder, salt, and pepper. Mix everything until well combined.
  3. Fill the muffin tin: Divide the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  4. Bake: Place the muffin tin in the oven and bake for about 15-20 minutes or until the muffins are set and slightly golden on top.
  5. Garnish and serve: Once done, remove from the oven and let them cool for a few minutes. Garnish with fresh parsley or chives if desired.

These tuna egg muffins are perfect for meal prep or a quick snack! You can store them in the fridge for up to 4 days and reheat as needed.
