Green Lentils & Eggs Stir-Fry

Ingredients:

  • 1 cup dry green lentils
  • 4 large eggs
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 small tomato, diced (optional)
  • 1 teaspoon cumin seeds
  • 1 teaspoon smoked paprika
  • ½ teaspoon turmeric powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or butter
  • Fresh cilantro or parsley, chopped (for garnish)
  • Lemon wedges (optional)

Instructions:

  1. Cook the Lentils:
    • Rinse the green lentils under cold water.
    • In a pot, bring 3 cups of water to a boil. Add the lentils and cook for about 20-25 minutes, until tender but not mushy. Drain and set aside.
  2. Prepare the Stir-Fry Base:
    • In a large skillet or pan, heat 1 tablespoon of olive oil over medium heat.
    • Add cumin seeds and allow them to sizzle for a few seconds.
    • Stir in the diced onions and sauté until soft and golden, about 3-4 minutes.
    • Add minced garlic, turmeric powder, smoked paprika, and salt. Cook for another 1-2 minutes, stirring frequently.
    • If using tomatoes, add them now and cook until softened.
  3. Add Lentils to the Mix:
    • Add the cooked green lentils to the pan. Stir well, ensuring the lentils are coated in the spices.
    • Let them cook for 2-3 minutes, absorbing the flavors.
  4. Cook the Eggs:
    • Push the lentil mixture to the sides of the pan, making space in the center.
    • Add the remaining tablespoon of oil, and crack the eggs directly into the pan (or scramble them in a bowl beforehand if preferred).
    • Cook the eggs until the whites are set but the yolks are still a bit runny, or scramble them completely, mixing them with the lentils.
  5. Combine and Serve:
    • Once the eggs are cooked to your liking, gently fold them into the lentil mixture.
    • Taste and adjust seasoning with salt and pepper if necessary.
  6. Garnish:
    • Top with fresh cilantro or parsley, and serve with lemon wedges on the side for a bright kick.

Serving Suggestions:

  • Enjoy this dish on its own or serve it with crusty bread or a side salad.
  • For extra richness, drizzle with olive oil or top with a dollop of yogurt.
