Flourless Apple Cocoa Cake (No Sugar, No Flour)

Ingredients:

  • 4 large apples (sweet varieties like Gala or Fuji work well)
  • 2 eggs
  • ½ cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1 tsp cinnamon (optional)
  • 1 tsp baking powder
  • 1 tbsp coconut oil (optional, for moisture)
  • 1 tbsp honey or a natural sweetener like stevia (optional, based on sweetness of apples)
  • A pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a small cake pan or loaf pan with parchment paper, or grease it lightly with coconut oil.
  2. Prepare the apples: Peel and core the apples. Grate three of them finely to create a kind of apple sauce. Chop the fourth apple into small cubes for texture.
  3. Mix the wet ingredients: In a large bowl, beat the eggs. Add in the grated apples, vanilla extract, and coconut oil (if using). Stir everything together until well combined.
  4. Add the dry ingredients: In a separate bowl, mix together the cocoa powder, baking powder, cinnamon, and salt.
  5. Combine the wet and dry ingredients, stirring until you get a smooth batter. Gently fold in the apple cubes.
  6. Bake: Pour the batter into the prepared cake pan. Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and serve: Let the cake cool completely before slicing. You can enjoy this cake as-is, or top with a dollop of Greek yogurt or some fresh berries for added flavor.

Notes:

  • If the apples you use are not sweet enough, you can add a tablespoon or two of honey or your favorite natural sweetener.
  • This cake is naturally moist thanks to the apples, and the cocoa provides a rich chocolate flavor without any added sugar or flour.
