Melt-in-Your-Mouth Apple Cake

Ingredients:

  • 3 large eggs
  • A pinch of salt
  • 135g sugar
  • 1/3 tsp vanilla extract
  • 135g milk
  • 70ml oil (vegetable or any neutral oil)
  • 15g baking powder (approx. 1 tablespoon)
  • 300g all-purpose flour
  • 2-3 apples (peeled, cored, and chopped)
  • Cinnamon powder, to taste
  • Additional sugar, for sprinkling

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 180°C (350°F). Grease and line a 9-inch (23 cm) round or square cake pan.
  2. Prepare the Batter:
    • In a large mixing bowl, beat the eggs with a pinch of salt until frothy.
    • Add the sugar and continue beating until the mixture becomes pale and thick.
    • Stir in the vanilla extract.
    • Gradually pour in the milk and oil, whisking until the mixture is smooth and well combined.
  3. Add Dry Ingredients:
    • In a separate bowl, whisk together the flour and baking powder.
    • Gradually fold the dry mixture into the wet ingredients, stirring gently until no lumps remain, being careful not to overmix.
  4. Incorporate Apples:
    • Gently fold the chopped apples into the batter.
    • Add cinnamon powder to taste for extra flavor (optional but recommended).
  5. Transfer to Pan:
    Pour the batter into the prepared cake pan and spread it evenly.
  6. Sprinkle Topping:
    • Sprinkle the top of the cake with a little extra sugar for a caramelized, crispy finish.
    • You can also add a light dusting of cinnamon if you enjoy a stronger cinnamon flavor.
  7. Bake:
    • Bake the cake in the preheated oven for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
    • The cake should rise beautifully and have a golden top.
  8. Cool and Serve:
    • Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
    • Once cooled, slice and serve! This cake is perfect on its own, or you can serve it with a dollop of whipped cream or a scoop of vanilla ice cream.
