Grandma’s Beetroot Delight

Ingredients:

  • 3 medium-sized beetroots, peeled and diced
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 1 tablespoon lemon juice
  • 1 tablespoon apple cider vinegar (optional for tang)
  • 1 teaspoon honey or maple syrup (optional for sweetness)
  • Salt and pepper, to taste
  • Fresh parsley or cilantro, chopped (for garnish)
  • ¼ cup crumbled feta cheese (optional)

Instructions:

  1. Prepare the beetroots: Peel and dice the beetroots into small cubes. Boil them in water with a pinch of salt for about 15-20 minutes or until they become tender but not mushy. Drain and set aside.
  2. Sauté aromatics:
    In a large skillet or pan, heat the olive oil over medium heat. Add cumin seeds and let them sizzle for about 30 seconds. Then, add the minced garlic and sauté until fragrant, about 1 minute.
  3. Cook the beets:
    Add the cooked beetroot cubes to the skillet, stirring well to coat them in the garlic and cumin. Cook for 5-7 minutes, allowing the flavors to meld.
  4. Season:
    Stir in the lemon juice, apple cider vinegar (if using), and honey or maple syrup for a touch of sweetness. Season with salt and pepper to taste. Toss everything well to ensure the beets are fully coated in the flavors.
  5. Serve:
    Remove from heat and garnish with fresh parsley or cilantro. For extra creaminess, sprinkle crumbled feta cheese on top.

Tips:

  • For a more roasted flavor, you can roast the beetroots in the oven at 400°F (200°C) for about 30-40 minutes before adding them to the skillet.
  • This dish pairs wonderfully with grilled meats, fish, or as a standalone salad.
