Ingredients:
- 1 cup dried lentils (any variety, like red or green)
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tomato, diced
- 1 carrot, chopped
- 1 potato, diced
- 1 small bunch of fresh moringa leaves (about 1 cup), or 1 tablespoon of dried moringa powder
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp black seed (Nigella sativa) (optional for added health benefits)
- 1 tbsp olive oil or coconut oil
- 4 cups vegetable broth or water
- Salt and pepper to taste
- Fresh lemon juice (for serving)
Instructions:
- Heat the oil in a large pot over medium heat. Add the cumin seeds and let them splutter for a few seconds.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the garlic, turmeric powder, and diced tomato. Cook until the tomato softens, about 3-4 minutes.
- Add the chopped carrot, potato, and lentils. Pour in the vegetable broth or water and bring to a boil.
- Lower the heat and simmer for about 20-25 minutes until the lentils and vegetables are tender.
- Stir in the moringa leaves (or powder) and cook for another 5 minutes.
- Season with salt and pepper to taste.
- Serve with a squeeze of fresh lemon juice for a bright, refreshing finish.
