Spiced Cumin-Lentil Soup

Ingredients:

  • 1 cup dried red lentils (or any preferred lentil variety)
  • 1 tablespoon cumin seeds
  • 1 teaspoon ground cumin
  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 inch fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon chili powder (optional, for a spicier kick)
  • 1 large tomato, chopped
  • 4 cups vegetable broth (or water)
  • Salt and black pepper to taste
  • Juice of 1 lemon
  • Fresh cilantro, chopped (for garnish)
  • Plain yogurt (optional, for serving)

Instructions:

  1. Prepare the Cumin Base:
In a dry pan over medium heat, toast the cumin seeds until they become fragrant and start popping (about 1-2 minutes). Set aside.
  2. Sauté Aromatics:
In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened and translucent (about 5-6 minutes). Then add the garlic and ginger, sautéing for another 1-2 minutes.
  3. Spice It Up:
Add the ground cumin, toasted cumin seeds, turmeric, coriander, and chili powder to the pot. Stir for 30 seconds to release the spices’ aroma.
  4. Add Lentils and Broth:
Stir in the lentils and chopped tomato. Pour in the vegetable broth (or water) and bring the mixture to a boil.
  5. Simmer:
Reduce the heat to low and let the soup simmer for 25-30 minutes, or until the lentils are soft and the soup has thickened.
  6. Finish with Lemon and Seasoning:
Stir in the lemon juice and season with salt and black pepper to taste. Adjust the seasoning as needed.
  7. Serve and Garnish:
Ladle the soup into bowls, garnish with chopped cilantro, and optionally top with a dollop of plain yogurt for a creamy finish.

Health Benefits:

  • Cumin helps with digestion, boosts the immune system, and is a great source of iron.
  • Lentils are rich in protein and fiber, supporting heart health and providing sustained energy.
