Spiced Vegetable Relish (100 Jars Recipe)

Ingredients:

  • 15 kg tomatoes, finely chopped
  • 10 kg bell peppers (mixed red, yellow, green), finely chopped
  • 8 kg onions, finely chopped
  • 5 kg carrots, grated
  • 4 kg zucchini, grated
  • 3 kg apples, peeled and grated
  • 2 kg cabbage, finely shredded
  • 2.5 liters vinegar (apple cider or white wine vinegar)
  • 3 kg sugar (adjust to taste)
  • 500 g black seed (Nigella sativa) for a unique twist
  • 200 g mustard seeds
  • 200 g turmeric powder
  • 300 g ginger, grated
  • 200 g garlic, minced
  • 200 g chili flakes (adjust for heat preference)
  • 300 g salt (adjust to taste)
  • 500 ml olive oil

Instructions:

  1. Prepare Vegetables:
    • Finely chop the tomatoes, bell peppers, and onions. Grate the carrots, zucchini, and apples. Shred the cabbage. Set aside in separate bowls.
  2. Cook the Base:
    • In a large, heavy-bottomed pot, heat the olive oil over medium heat.
    • Add the onions and garlic, sauté until golden and fragrant.
    • Stir in the tomatoes and cook for about 10-15 minutes until they break down and release their juices.
  3. Add the Spices:
    • Add the grated ginger, chili flakes, turmeric, mustard seeds, and black seeds. Cook for 2-3 minutes, allowing the spices to release their aroma.
  4. Combine the Vegetables:
    • Add the bell peppers, carrots, zucchini, apples, and cabbage to the pot.
    • Stir everything together and cook for 20-25 minutes until the vegetables begin to soften.
  5. Add Vinegar and Sugar:
    • Pour in the vinegar and sugar, stirring well. Bring the mixture to a simmer, then reduce heat and let it cook for another 1-2 hours, stirring occasionally. The relish should thicken and reduce to a jam-like consistency.
  6. Season:
    • Add salt and adjust seasoning as needed. If you prefer more heat, add extra chili flakes.
  7. Jar It Up:
    • Sterilize your jars by boiling them in water or placing them in the oven at 180°C (350°F) for 10-15 minutes.
    • While still hot, ladle the hot relish into the jars, leaving a little space at the top. Seal tightly with lids.
  8. Store:
    • Allow the jars to cool before storing them in a cool, dark place. This relish can last for months, making it perfect to enjoy throughout winter!
