Directions:
- Scrub the beets thoroughly and trim the tops to about 1 inch.
- Place the beets in a Dutch oven or large pot, and add water until the beets are fully covered.
- Bring the water to a boil, then reduce heat. Cover the pot and simmer for 25-30 minutes, or until the beets are tender.
- Remove the beets from the water and let them cool. Once cooled, peel and slice them. Set the sliced beets aside in a bowl.
- In a small saucepan, combine the vinegar, sugar, cloves, allspice, and salt. Bring this mixture to a boil and let it boil for 5 minutes.
- Pour the hot vinegar mixture over the sliced beets, ensuring they are fully coated. Refrigerate for at least 1 hour before serving to allow the flavors to meld.
- Drain the pickled beets before serving.
