Instructions:
- Sauté the Vegetables: In a large pot, melt the butter over medium heat. Add the diced onion, celery, and carrot. Sauté for about 5-7 minutes until the vegetables are softened. Add the minced garlic and cook for another minute until fragrant.
- Add Tomato Puree: Stir in the tomato puree and cook for about 2 minutes, allowing the flavors to meld.
- Pour in the Stock: Add the seafood stock to the pot, and bring to a simmer. Let it cook for about 10 minutes.
- Add Seafood: Gently add the crab meat and shrimp to the pot. Stir in the Old Bay seasoning and season with salt and pepper to taste. Cook for an additional 5-7 minutes until the shrimp are opaque and cooked through.
- Blend the Bisque (Optional): If you prefer a smoother texture, you can use an immersion blender to puree the bisque to your desired consistency. If you like it chunky, skip this step.
- Stir in the Cream: Reduce the heat to low and stir in the heavy cream. Heat through, but do not bring to a boil.
- Serve: Ladle the bisque into bowls, garnish with fresh parsley, and serve with lemon wedges on the side.
