Cabbage and Cucumber Salad

Ingredients:

  • 1/3 green cabbage, shredded
  • 1/3 red cabbage, shredded
  • 1/4 teaspoon salt (for each cabbage)
  • 1-2 cucumbers, sliced thinly
  • 1/2 onion, thinly sliced
  • 1 carrot, shredded
  • 20g walnuts, roughly chopped
  • 1 teaspoon rice vinegar

Instructions:

  1. Prepare the cabbages: In two separate bowls, sprinkle 1/4 teaspoon of salt over the green and red cabbage. Let them sit for about 5-10 minutes to soften and release some water.
  2. Prepare the vegetables: While the cabbage is resting, thinly slice the cucumbers and onion. Shred the carrot using a grater.
  3. Assemble the salad: Drain any excess water from the cabbage. In a large mixing bowl, combine the green cabbage, red cabbage, cucumbers, onion, and shredded carrot.
  4. Season and dress: Add the rice vinegar to the salad and toss everything together. Adjust the seasoning with additional salt or vinegar to taste, if needed.
  5. Add crunch: Top the salad with roughly chopped walnuts for added texture and a boost of healthy fats.
  6. Serve: Enjoy this refreshing cabbage salad as a light dinner or side dish.
