Upside-Down Banana Cake: Super Simple Recipe with Only 1 Egg and 2 Bananas

 

Ingredients:

For the Cake:

  • 1 egg
  • 60 g (6 tbsp) sugar
  • 130 ml milk
  • 2 g (1/2 tsp) salt
  • 1 tsp vanilla extract
  • 150 g (1 1/4 cups) cake flour or all-purpose flour
  • 5 g (2/3 tbsp) baking powder
  • 50 ml vegetable oil

For the Topping:

  • 10 g unsalted butter
  • 15 g (1 1/2 tbsp) raw sugar or regular sugar
  • 2 bananas (ripe)

Instructions:

  1. Prepare the Topping:
    • Preheat the oven to 180°C (350°F).
    • Grease a 20 cm (8-inch) round cake pan.
    • Melt the butter and pour it into the bottom of the cake pan. Sprinkle the sugar evenly over the melted butter.
    • Slice the bananas lengthwise or into rounds, and arrange them on top of the butter and sugar mixture, covering the bottom of the pan.
  2. Make the Cake Batter:
    • In a large bowl, whisk together the egg, sugar, milk, salt, and vanilla extract until smooth.
    • Sift the flour and baking powder together, then gradually add it to the wet ingredients. Mix until just combined, being careful not to overmix.
    • Stir in the vegetable oil until fully incorporated.
  3. Assemble the Cake:
    • Pour the cake batter over the banana slices in the prepared pan, spreading it evenly with a spatula.
  4. Bake:
    • Bake in the preheated oven for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  5. Cool and Flip:
    • Let the cake cool in the pan for about 10 minutes. Run a knife around the edges to loosen it.
    • Place a serving plate upside down over the pan, then flip the cake over onto the plate so the banana topping is on top.
  6. Serve:
    • Allow the cake to cool slightly before serving. Enjoy warm or at room temperature!
