Apple Surprise

Ingredients:

  • 4 medium apples (Granny Smith or Honeycrisp work well)
  • 4 tablespoons honey or maple syrup
  • 1 teaspoon cinnamon
  • 1/4 cup crushed nuts (walnuts or almonds)
  • 2 tablespoons raisins or dried cranberries (optional)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon butter (optional for richness)

Instructions:

  1. Preheat Oven: Set your oven to 350°F (175°C).
  2. Core the Apples: Using an apple corer, remove the core and seeds from each apple, creating a hollow center.
  3. Prepare the Filling: In a bowl, mix together the honey (or maple syrup), cinnamon, crushed nuts, raisins (if using), and vanilla extract.
  4. Stuff the Apples: Fill the hollow centers of the apples with the prepared mixture. Press it in to make sure the filling is evenly distributed.
  5. Optional Butter Topping: If you like a richer dessert, add a small pat of butter on top of each apple.
  6. Bake: Place the stuffed apples in a baking dish and bake for 20-25 minutes, or until the apples are soft and lightly browned.
  7. Serve: Remove from the oven and let cool slightly. Serve warm, either on its own or with a scoop of vanilla ice cream or a drizzle of yogurt.
