Ingredients:

  • 2 tablespoons coconut oil
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced

  • 1 medium zucchini, sliced
  • 1 medium carrot, julienned (rich in antioxidants)

Instructions:

  1. Heat the coconut oil in a large skillet over medium heat.
  2. Add onion, garlic, and ginger to the skillet and sauté for 2-3 minutes until softened and fragrant.
