Energy-Packed Date & Nut Bars

Ingredients:

  • 1 cup dates (pitted and chopped)
  • 1/2 cup almonds (or any nut of your choice)
  • 1/2 cup walnuts
  • 2 tbsp chia seeds (optional)
  • 2 tbsp ground flaxseeds
  • 1/4 cup rolled oats
  • 1 tbsp honey or maple syrup
  • 1/2 tsp cinnamon
  • Pinch of sea salt
  • 1 tbsp coconut oil

Instructions:

  1. Prepare the Dates: Soak the chopped dates in warm water for 10 minutes if they’re too dry, then drain.
  2. Blend the Nuts: In a food processor, pulse the almonds and walnuts until they are finely chopped but not too powdery. Transfer to a bowl.
  3. Blend Dates: Add the soaked dates to the food processor and blend until they form a thick, sticky paste.
  4. Combine: Add the nuts, oats, chia seeds, flaxseeds, cinnamon, sea salt, honey (or syrup), and coconut oil into the food processor with the dates. Pulse until the mixture comes together.
  5. Shape the Bars: Line a small baking dish or pan with parchment paper, and press the mixture into an even layer.
  6. Chill and Set: Refrigerate for at least 1 hour until the bars firm up.
  7. Cut and Serve: Slice into squares or bars. Store in the fridge for up to a week.
