Ingredients:
- 1 cup granulated sugar
- 1/2 cup heavy cream
- 1/4 cup salted butter (cut into small pieces)
- 1/2 tsp sea salt (adjust to taste)
Instructions:
- Melt the Sugar: In a medium-sized, heavy-bottomed saucepan, heat the granulated sugar over medium heat. Stir constantly with a heatproof spatula or whisk. The sugar will start to clump, then melt into a thick amber-colored liquid. Be careful not to burn it.
- Add Butter: Once the sugar is completely melted and smooth, add the salted butter. The mixture will bubble up vigorously, so stir carefully until the butter is fully melted and combined.
- Add Cream: Slowly pour in the heavy cream while continuing to stir. The caramel will bubble up again. Keep stirring until the mixture is smooth and creamy.
- Salt: Remove the pan from heat and stir in the sea salt.
- Cool: Let the caramel cool for a few minutes, then transfer to a jar. As it cools, it will thicken. You can store it in the fridge for up to 2 weeks.
