Guilt-Free Oatmeal Cookies with Cranberries and Walnuts

Ingredients

  • 1 cup oatmeal (90g)
  • 50g dried cranberries
  • Zest of 1 lemon
  • 1/4 cup walnuts, chopped (30g)
  • 1/4 cup dates, chopped (35g)
  • 1 egg
  • 2 tablespoons butter, melted (30g)

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare the Oatmeal Base: In a mixing bowl, combine the oatmeal, cranberries, lemon zest, walnuts, and chopped dates. Mix until everything is evenly distributed.
  3. Add Wet Ingredients: In a separate bowl, beat the egg lightly, then add it to the dry ingredients along with the melted butter. Stir until the mixture is combined and holds together.
  4. Shape the Cookies: Scoop out about 1 tablespoon of dough and shape it into a small ball. Flatten slightly and place on the prepared baking sheet. Repeat with remaining dough, leaving space between each cookie.
  5. Bake: Place in the preheated oven and bake for 12-15 minutes, or until the edges are golden brown.
  6. Cool and Enjoy: Remove from the oven, let the cookies cool for a few minutes, then transfer them to a wire rack to cool completely.

Tips:

  • Add a dash of cinnamon for extra warmth.
  • For added sweetness, drizzle with a little honey or maple syrup before baking.
