Spinach Egg Wraps

Ingredients

  • 3 large eggs
  • 65g fresh spinach (about a large handful)
  • Salt to taste
  • Oil for pan (a light coating)

Instructions

  1. Blend Ingredients: Place the eggs, spinach, and salt into a blender. Blend until smooth and well combined.
  2. Preheat and Oil Pan: Lightly coat a non-stick pan with oil and heat over medium-low.
  3. Cook the Wraps: Pour a small portion of the batter into the pan (about ⅓ each time). Tilt the pan to spread the mixture thinly and evenly.
  4. Cover and Cook: Cover the pan with a lid and cook for 1-2 minutes, or until the wrap begins to set. Flip carefully and cook for another 1-2 minutes on the other side.
  5. Cool and Store: Let the wraps cool on a plate, then layer with parchment paper in between to prevent sticking. Store in an airtight container in the fridge.

  • Serving: Makes 3 wraps.
  • Storage: Wraps can be stored in the fridge for several days.
  • Uses: Fill with your favorite ingredients to enjoy as a wrap or sandwich alternative.
