Easy Homemade Mayonnaise

Ingredients:

  • 1 large egg (room temperature)
  • 1 cup neutral oil (like canola, grapeseed, or sunflower)
  • 1 tablespoon lemon juice or vinegar (optional for flavor)
  • Salt to taste (optional)

Instructions:

  1. Prepare Your Equipment:
    • Use a tall container (like a measuring jug) that fits the head of an immersion blender. This will help create the emulsion.
  2. Combine Ingredients:
    • Place the egg in the bottom of the container. Add the neutral oil on top of the egg. If using, add the lemon juice or vinegar and a pinch of salt.
  3. Blend:
    • Insert the immersion blender into the container, making sure it reaches the bottom. Turn it on and hold it still for about 30 seconds until you see the mixture begin to emulsify and thicken.
  4. Move the Blender:
    • Once you see the mayonnaise starting to form at the bottom, slowly move the blender up and down through the mixture for another 30 seconds until the mayonnaise is fully emulsified and thickened.
  5. Taste and Adjust:
    • Taste your mayonnaise and add more salt, lemon juice, or vinegar if desired. Blend for a few more seconds to combine.
  6. Store:
    • Transfer the mayonnaise to a clean jar or container. It can be stored in the refrigerator for up to a week.

Tips:

  • Make sure your egg is at room temperature for the best emulsion.
  • Experiment with flavors by adding mustard, garlic, or herbs to customize your mayonnaise!
