Recipe: Roasted Beetroot Bliss with Goat Cheese and Balsamic Glaze
This recipe is a simple yet flavorful way to enjoy the health benefits of beetroot. The roasting process brings out the sweetness of the beetroot, while the goat cheese and balsamic glaze add a decadent touch.
Ingredients:
- 2 medium beetroots, washed and trimmed
- 1 tablespoon olive oil
- 1/2 teaspoon dried thyme
- Salt and freshly ground black pepper, to taste
- 4 ounces goat cheese, crumbled
- 1/4 cup balsamic vinegar
- 1 tablespoon brown sugar
- Freshly chopped chives, for garnish (optional)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut the beetroots into wedges or cubes. Aim for bite-sized pieces.
- Toss the beetroots with olive oil, thyme, salt, and pepper. Spread them out in a single layer on the prepared baking sheet.
- Roast for 30-40 minutes, or until the beetroots are tender when pierced with a fork.
- While the beetroots are roasting, prepare the balsamic glaze. In a small saucepan, combine balsamic vinegar and brown sugar. Heat over medium heat, stirring occasionally, until the mixture thickens and becomes syrupy (about 5-7 minutes).
- Once the beetroots are cooked, remove them from the oven and arrange them on a serving plate.
- Crumble the goat cheese over the roasted beetroots.
- Drizzle the balsamic glaze over the top.
