Salmon with Roasted Vegetables and Quinoa

Ingredients:
- 2 salmon fillets
- 1 tablespoon olive oil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup broccoli florets
- 1 cup cherry tomatoes
- 1/2 cup quinoa, rinsed
- 1 1/2 cups vegetable broth
- 1 lemon, sliced

Instructions:
- Preheat oven to 400°F (200°C).
- Season salmon fillets with olive oil, oregano, salt, and pepper.
- Toss broccoli florets and cherry tomatoes with olive oil, salt, and pepper. Arrange vegetables on a baking sheet.
- Place salmon fillets on top of the vegetables and arrange lemon slices around the pan.
- In a separate pot, combine rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until quinoa is cooked and fluffy.
