Golden Lemon Curd Recipe
Ingredients:
- 1 large egg
- 1 lemon (for juice and zest)
- 1/2 cup (100g) granulated sugar
- 2 tablespoons unsalted butter
Instructions:
- Prepare the Lemon:
- Zest the lemon to get about 1 tablespoon of lemon zest.
- Juice the lemon to get about 1/4 cup of fresh lemon juice.
- Mix Ingredients:
- In a heatproof bowl, whisk together the egg and granulated sugar until well combined.
- Add the lemon zest and lemon juice to the egg mixture and whisk until smooth.
- Cook the Mixture:
- Place the bowl over a pot of simmering water (double boiler method) or on a very low heat on the stove. Make sure the bottom of the bowl doesn’t touch the water.
- Stir constantly with a wooden spoon or heatproof spatula until the mixture thickens and reaches a custard-like consistency. This usually takes about 10-15 minutes. The curd is ready when it coats the back of the spoon.
- Finish the Curd:
- Remove the bowl from heat.
- Stir in the unsalted butter until fully melted and incorporated.
- Cool and Store:
- Let the lemon curd cool to room temperature.
- Transfer to a clean jar or airtight container and refrigerate. It will keep for up to 1-2 weeks in the fridge.
Serving Suggestions:
- Spread on toast or scones.
- Use as a filling for cakes or pastries.
- Swirl into yogurt or ice cream for a zesty twist.
