Golden Lemon Curd Recipe

Ingredients:

  • 1 large egg
  • 1 lemon (for juice and zest)
  • 1/2 cup (100g) granulated sugar
  • 2 tablespoons unsalted butter

Instructions:

  1. Prepare the Lemon:
    • Zest the lemon to get about 1 tablespoon of lemon zest.
    • Juice the lemon to get about 1/4 cup of fresh lemon juice.
  2. Mix Ingredients:
    • In a heatproof bowl, whisk together the egg and granulated sugar until well combined.
    • Add the lemon zest and lemon juice to the egg mixture and whisk until smooth.
  3. Cook the Mixture:
    • Place the bowl over a pot of simmering water (double boiler method) or on a very low heat on the stove. Make sure the bottom of the bowl doesn’t touch the water.
    • Stir constantly with a wooden spoon or heatproof spatula until the mixture thickens and reaches a custard-like consistency. This usually takes about 10-15 minutes. The curd is ready when it coats the back of the spoon.
  4. Finish the Curd:
    • Remove the bowl from heat.
    • Stir in the unsalted butter until fully melted and incorporated.
  5. Cool and Store:
    • Let the lemon curd cool to room temperature.
    • Transfer to a clean jar or airtight container and refrigerate. It will keep for up to 1-2 weeks in the fridge.

Serving Suggestions:

  • Spread on toast or scones.
  • Use as a filling for cakes or pastries.
  • Swirl into yogurt or ice cream for a zesty twist.
