Cold Pasta Salad Recipe with Tuna

Ingredients

  • 8 oz (225 g) pasta (such as rotini, penne, or bow-tie)
  • 1 can (5 oz or 140 g) tuna, drained and flaked
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)

Dressing:

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Add the pasta and cook according to the package instructions until al dente.
    • Drain the pasta and rinse under cold water to cool it down. Set aside.
  2. Prepare the Dressing:
    • In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic, salt, and pepper until well combined.
  3. Combine the Ingredients:
    • In a large mixing bowl, combine the cooked and cooled pasta, flaked tuna, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, and fresh parsley.

    • Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
  5. Serve:
    • Before serving, give the salad a good stir. Sprinkle with crumbled feta cheese if desired.
