Banana Strings Utilization Muffins
Ingredients:
- 3 ripe bananas
- 1 cup sugar
- 1 egg, beaten
- 1/4 cup melted butter
- 1 1/2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- Banana strings from 3 bananas (these little strings on the bananas are called “phloem bundles” and are completely edible, adding extra fiber)
Instructions:
- Preheat and Prep:
- Preheat your oven to 350°F (175°C).
- Line a muffin tin with paper liners or grease it lightly.
- Mash Bananas:
- In a large mixing bowl, mash the bananas with a fork until smooth.
- Make sure to include the phloem bundles (banana strings) for added texture and fiber.
- Mix Wet Ingredients:
- Add the sugar, beaten egg, and melted butter to the mashed bananas. Mix well until everything is combined.
- Combine Dry Ingredients:
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix.
- Fill Muffin Tins:
- Spoon the batter into the prepared muffin tins, filling each cup about 2/3 full.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool:
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
