😋 Vegan Pea Soup Recipe
This delicious vegan pea soup is not only healthy but also keto-friendly! It’s easy to make and has quickly become one of my favorite recipes. 😋❤
Ingredients:
- 2 cups green peas (fresh or frozen)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 medium carrot, chopped
- 1 celery stalk, chopped
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
- Lemon juice to taste (optional)
Instructions:
- Prep the Vegetables:
- If using fresh peas, shell them and rinse. If using frozen peas, thaw them out.
- Chop the onion, carrot, and celery, and mince the garlic.
- Sauté the Aromatics:
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes, until the vegetables are tender.
- Add the minced garlic and cook for another 1-2 minutes, until fragrant.
- Cook the Soup:
- Pour in the vegetable broth and bring to a boil.
- Add the peas, thyme, and basil.
- Reduce the heat and let it simmer for about 15-20 minutes, until the peas are tender.
- Blend the Soup:
- Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender and blend until smooth.
- If you prefer a chunkier texture, blend only half of the soup and mix it back into the pot.
- Season and Serve:
- Season with salt and pepper to taste.
- Add a splash of lemon juice for a fresh, tangy flavor, if desired.
- Garnish with fresh parsley.
