Beet and Coconut Milk Soup

Ingredients:

  1. 2 large beets, peeled and chopped
  2. 2 cups coconut milk (or any plant-based milk of your choice)
  3. Salt to taste

Instructions:

  1. Boil the Beets: In a large pot, bring water to a boil. Add the chopped beets and cook until they are tender, about 20-25 minutes. Drain and set aside.
  2. Prepare the Milk: In a separate pot, pour in the coconut milk and heat over medium-low heat until it starts to simmer. Be careful not to let it boil over.
  3. Combine Ingredients: Add the cooked beets to the simmering coconut milk. Let it cook together for about 5 minutes to allow the flavors to meld.
  4. Blend: Use an immersion blender to puree the mixture until smooth. If you don’t have an immersion blender, you can transfer the mixture to a regular blender in batches and blend until smooth.
  5. Season: Add salt to taste, stirring well to combine.
  6. Serve: Pour the beet and coconut milk soup into bowls and serve hot.
