Vegan Apple Cinnamon Bread
Ingredients:
- 2 cups all-purpose flour
- 1 cup whole wheat flour
- 1 cup coconut sugar (or brown sugar)
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground allspice
- 1/2 cup unsweetened applesauce
- 1/2 cup vegetable oil (or melted coconut oil)
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 cup almond milk (or any plant-based milk)
- 2 cups peeled and finely chopped apples (about 2 medium apples)
- 1/2 cup chopped walnuts or pecans (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the all-purpose flour, whole wheat flour, coconut sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and allspice.
- In a separate bowl, mix the applesauce, vegetable oil, maple syrup, vanilla extract, and almond milk until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
- Fold in the chopped apples and nuts (if using) until evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan and spread it out evenly.
- Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Slice and enjoy! This bread is delicious on its own or with a spread of vegan butter.
