Spanish-Inspired Roasted Broccoli and Cauliflower

Ingredients:

  • 1 medium head of broccoli, cut into florets
  • 1 medium head of cauliflower, cut into florets
  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, thinly sliced
  • 1 teaspoon smoked paprika (pimentón)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Juice of 1 lemon
  • 1/4 cup sliced almonds
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it with olive oil.
  2. Prepare the Vegetables: In a large mixing bowl, combine the broccoli and cauliflower florets. Drizzle with the olive oil and toss to coat evenly.
