Vegan Banana Bread with Baking Soda

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 3 ripe bananas, mashed
  • 1/2 cup coconut oil, melted
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup almond milk
  • 1/2 cup chopped walnuts (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Dry Ingredients: In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg until well combined.
  3. Wet Ingredients: In another bowl, mix the mashed bananas, melted coconut oil, brown sugar, maple syrup, vanilla extract, and almond milk until smooth and well combined.
  4. Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix. If using, fold in the chopped walnuts.
  5. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool: Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  7. Serve: Slice and serve your vegan banana bread warm or at room temperature. Enjoy!

Tips:

  • Baking Soda Role: Baking soda reacts with the acidity of the bananas and helps the bread rise, giving it a light and fluffy texture.
  • Storage: Store the banana bread in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.

Enjoy this delicious vegan banana bread, and remember, baking soda is not just for cleaning—it’s a baker’s best friend!
