Homemade Lemon Cheese Recipe

Ingredients:

  • 1 liter of fresh milk
  • 2 to 3 tablespoons of fresh lemon juice

Instructions:

  1. Heat the Milk:
    • Pour the milk into a large pot and heat it slowly over medium heat on the stove. Stir occasionally until small bubbles form at the edges, but do not let it boil.
  2. Add Lemon Juice:
    • Reduce the heat to low once the milk is hot. Stir in the lemon juice gently. The milk will start to curdle as the lemon juice reacts with it, forming curds.
  3. Let it Sit:
    • Remove the pot from heat and let it sit for 5 to 10 minutes. During this time, the curds will separate from the whey.
  4. Strain the Curds:
    • Line a colander with cheesecloth or a fine linen towel, and place it over a large bowl. Pour the mixture into the colander to separate the curds from the whey.
  5. Press the Cheese:
    • Gather the corners of the cheesecloth and gently squeeze out excess whey. You can hang it or press it under a weight for a firmer cheese.
  6. Season and Enjoy:
    • Unwrap the cheese and season it with salt or herbs to taste. Your homemade cheese is now ready to enjoy!

Since you no longer shop in stores, make sure to source your fresh milk and lemons directly from local farms or farmers’ markets. This recipe is perfect for enjoying a simple, homemade treat with just two basic ingredients!
