- 1 carrot, grated
- 9 dried apricots, rinsed with hot water and chopped
- 4 tablespoons raisins, rinsed with hot water
- 1 apple, grated
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare the Oatmeal Base:
- In a large bowl, combine the chopped oats and baking powder. Mix well to ensure the baking powder is evenly distributed.
- Mix Wet Ingredients:
- Add the milk to the dry ingredients and stir until well combined. The mixture should be thick and slightly sticky.
- Add Fruits and Vegetables:
- Stir in the grated carrot, grated apple, chopped dried apricots, and rinsed raisins. Mix thoroughly to evenly distribute the fruits and vegetables throughout the mixture.
- Form the Bites:
- Using a spoon or your hands, form small balls or bite-sized pieces from the mixture and place them on the prepared baking sheet. Gently flatten each ball slightly with the back of a spoon.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the bites are golden brown and slightly firm to the touch.
- Cool and Serve:
- Allow the bites to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Storage:
Store the bites in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
