Ingredients:

  • 1 perfectly ripe banana
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter (softened)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • Powdered sugar (for dusting, optional)

Instructions:

  1. Prepare the Banana:
    • Peel the banana and mash it in a bowl until smooth. Set aside.
  2. Mix Dry Ingredients:
    • In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cream the Butter and Egg:
    • In a large bowl, cream the softened butter and egg together until light and fluffy.
  4. Combine Ingredients:
    • Gradually add the dry ingredients to the butter mixture, alternating with milk. Stir until just combined.
    • Gently fold in the mashed banana until evenly distributed.
  5. Bake:
    • Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
    • Pour the batter into the prepared pan and smooth the top.
  6. Bake the Cake:
    • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. The cake should have a lovely, snow-white appearance.
  7. Cool and Serve:
    • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
    • Once cool, dust with powdered sugar if desired for an extra touch of elegance.
