Banana Peel Curry Recipe

Ingredients:

  • 3-4 ripe banana peels (yellow with some brown spots, thoroughly washed)
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 green chili, slit
  • 1 tsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 tbsp cooking oil
  • Fresh coriander leaves, chopped (for garnish)
  • 1 cup water

Instructions:

  1. Prep the Banana Peels:
    • Scrape off the inner white part of the banana peel using a spoon.
    • Cut the peels into small, bite-sized pieces.
  2. Cooking the Curry:
    • Heat oil in a pan over medium heat. Add mustard and cumin seeds, and let them splutter.
    • Add the chopped onion and sauté until golden brown.
    • Add the ginger-garlic paste and sauté for another minute until fragrant.
    • Add the chopped tomatoes and green chili. Cook until the tomatoes soften and release their juices.
    • Stir in the turmeric, coriander powder, and salt. Cook for 2-3 minutes until the spices are well mixed.
    • Add the banana peel pieces, mixing them well with the spice mixture.
    • Pour in 1 cup of water, cover the pan, and let it simmer on low heat for 15-20 minutes until the banana peels are tender and flavorful.
  3. Finish and Serve:
    • Once the curry is ready, sprinkle garam masala and mix well.
    • Garnish with fresh coriander leaves and serve hot with rice or flatbread.
