Ingredients:
- 1 cup of chilled milk (full-fat works best)
- 1/2 cup of freshly squeezed lemon juice
- 1 tablespoon of lemon zest (optional, for extra flavor)
- 1/2 cup of sugar (adjust to taste)
- A pinch of salt
Instructions:
- Mix the Lemon and Sugar: In a mixing bowl, combine the freshly squeezed lemon juice, sugar, and a pinch of salt. Stir well until the sugar is fully dissolved.
- Add the Milk: Gradually pour the chilled milk into the lemon-sugar mixture, stirring constantly. The mixture will start to thicken slightly as the lemon juice reacts with the milk.
- Optional – Lemon Zest: If you want an extra burst of lemon flavor, stir in the lemon zest.
- Whip the Mixture: Using a hand whisk or an electric mixer, whip the mixture for about 2-3 minutes until it becomes creamy and slightly frothy.
- Freeze: Pour the mixture into a shallow, freezer-safe container. Cover it with plastic wrap or a lid and place it in the freezer.
- Chill for 10 Minutes: Let it chill in the freezer for about 10 minutes. It won’t be fully frozen but will be a soft, creamy texture perfect for immediate serving.
- Serve: Scoop the lemon ice cream into bowls or cones and enjoy!
Tip: If you want a firmer texture, leave it in the freezer for an additional 30-40 minutes. Stir every 10 minutes to prevent ice crystals from forming.
