Chocolate Pudding in a Cup: No Oven Needed and Delicious!

Ingredients:

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 3 tablespoons cornstarch
  • A pinch of salt
  • 1 teaspoon vanilla extract
  • 1/4 cup semi-sweet chocolate chips
  • Whipped cream (optional, for topping)
  • Chocolate shavings or sprinkles (optional, for garnish)

Instructions:

  1. Combine Dry Ingredients:
    • In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt until well combined.
  2. Add Milk:
    • Gradually pour in the milk while whisking continuously to avoid lumps.
  3. Cook the Mixture:
    • Place the saucepan over medium heat and cook the mixture, stirring constantly. Continue to cook until it thickens and comes to a gentle boil. This should take about 5-7 minutes.
  4. Add Chocolate:
    • Once the mixture has thickened, remove the saucepan from heat. Stir in the vanilla extract and chocolate chips until the chocolate is fully melted and the pudding is smooth.
  5. Serve:
    • Pour the pudding into individual cups or bowls. Let it cool slightly, then refrigerate for at least 2 hours to set.
  6. Garnish and Enjoy:
    • Before serving, you can top the pudding with whipped cream and chocolate shavings or sprinkles for an extra touch.

Tips:

  • For a richer flavor, you can use dark chocolate chips instead of semi-sweet.
  • If you like a more intense chocolate taste, increase the cocoa powder by an extra tablespoon.
  • This pudding is perfect for making ahead and can be stored in the fridge for up to 3 days.
