Ingredients:
- 1/2 block silken tofu (extra-firm works too, but silken is smoother)
- 2 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and black pepper to taste

- High-speed blender
Instructions:
- Prep your tofu: Drain any excess water from the silken tofu.
- Combine ingredients: Place all ingredients into a high-speed blender.
- Blend: Blend on high speed until smooth and creamy. This should take about 1-2 minutes. Scrape down the sides of the blender as needed.
- Taste and adjust: Taste the mayonnaise and adjust seasonings as desired.
Tips:
- For a thicker mayonnaise, let it chill in the refrigerator for at least 30 minutes.
- Experiment with different flavors by adding herbs, spices, or other condiments like hot sauce.
- Store in an airtight container in the refrigerator for up to a week.
