Beetroot, Carrot, and Cabbage Salad

Yields: 4 servings Prep time: 20 minutes

Ingredients:

  • 2 medium beetroot, peeled and grated
  • 2 large carrots, peeled and grated
  • 1/4 green cabbage, shredded
  • 1/4 red cabbage, shredded
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Prepare the vegetables: Grate the beetroot and carrots. Shred the green and red cabbage.
  2. Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper.
  3. Combine ingredients: In a large bowl, combine the grated beetroot, carrots, and shredded cabbages. Pour the dressing over the vegetables and toss to coat evenly.
  4. Serve: Chill the salad for at least 30 minutes before serving. Garnish with fresh parsley.

Tips:

  • For a spicier salad, add a pinch of red pepper flakes to the dressing.
  • You can also add other vegetables to this salad, such as cucumber or bell pepper.
  • For a heartier salad, add cooked quinoa or chickpeas.
