Ingredients:
- 1/4 cup chia seeds
- 1 cup plant-based milk (almond, coconut, oat, or soy)
- 1/4 cup Greek yogurt (optional, for added creaminess)
- 1 tablespoon maple syrup or honey (adjust to taste)
- 1 teaspoon vanilla extract
- A pinch of cinnamon
- Fresh fruits of your choice (mango, pineapple, papaya, kiwi)
- Optional toppings: granola, coconut flakes, nuts
Instructions:
- In a medium bowl, combine chia seeds, plant-based milk, Greek yogurt (if using), maple syrup, vanilla extract, and cinnamon. Stir well to combine.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight. The chia seeds will absorb the liquid and form a pudding-like consistency.
- Once the chia pudding has set, stir gently to break up any clumps.
- Divide the pudding into two bowls.
- Top with your favorite tropical fruits, granola, coconut flakes, or nuts.
