Coffee Egg Custard (No Flour or Gelatin)

Ingredients:

  • 2 eggs
  • 1 tablespoon instant coffee (or brewed espresso)
  • 2 tablespoons sugar (adjust to taste)
  • 1/2 teaspoon vanilla extract (optional)
  • A pinch of salt
  • 1/2 cup milk (dairy or non-dairy)
  • Whipped cream (optional, for topping)
  • Cocoa powder (optional, for dusting)

Instructions:

  1. Prepare the Coffee:
    • If using instant coffee, dissolve it in 1-2 tablespoons of hot water. If using brewed espresso, have it ready. Let it cool slightly.
  2. Whisk the Eggs:
    • In a medium bowl, whisk together the eggs, sugar, and a pinch of salt until the mixture becomes smooth and slightly frothy.
  3. Add the Coffee:
    • Gradually whisk in the coffee and vanilla extract (if using). Ensure that the coffee is not too hot to avoid cooking the eggs prematurely.
  4. Add the Milk:
    • Slowly pour in the milk, whisking continuously to create a smooth custard mixture.
  5. Cook the Custard:
    • Pour the mixture into a small saucepan. Cook over low heat, stirring constantly with a wooden spoon or spatula, until the mixture thickens and coats the back of the spoon. This should take about 5-7 minutes. Do not let it boil.
  6. Cool and Serve:
    • Once thickened, remove the custard from heat. Pour it into serving cups or ramekins. Allow it to cool to room temperature, then refrigerate for at least 30 minutes to set.
  7. Optional Toppings:
    • Before serving, you can add a dollop of whipped cream and a light dusting of cocoa powder on top.
