Canned Pickled Eggs

Ingredients:

  • 12 large eggs
  • 2 cups white vinegar
  • 1 cup water
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 1 teaspoon dill seeds (optional)
  • 2 bay leaves
  • 2 cloves garlic, peeled and sliced
  • 1 small onion, thinly sliced
  • Optional: red pepper flakes or sliced chili for a spicy kick

Instructions:

  1. Prepare the Eggs:
    • Place the eggs in a large pot and cover them with water.
    • Bring the water to a boil, then reduce the heat and simmer for 10 minutes.
    • Remove the eggs and immediately place them in a bowl of ice water to cool.
    • Once cooled, peel the eggs carefully.
  2. Prepare the Brine:
    • In a medium saucepan, combine the vinegar, water, salt, and sugar.
    • Add the peppercorns, mustard seeds, dill seeds, bay leaves, garlic, and onion slices.
    • Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes.
    • Remove the saucepan from heat and let the brine cool slightly.
  3. Jar the Eggs:
    • Place the peeled eggs into a clean, sterilized glass jar.
    • If you want spicy pickled eggs, add red pepper flakes or sliced chili to the jar.
    • Pour the warm brine over the eggs, making sure they are completely submerged.
    • Seal the jar with a lid.
  4. Canning Process (Optional):
    • If you want to store the eggs for an extended period (up to 2 years), consider using a water bath canning method.
    • Place the sealed jar in a boiling water bath for 10 minutes.
    • Remove the jar and let it cool. Ensure the lid is tightly sealed by pressing the center; it should not pop back.
  5. Storage:
    • Store the jar in a cool, dark place.
    • For best flavor, let the eggs pickle for at least 2 weeks before eating.
  6. Serving:
    • Enjoy the pickled eggs as a snack, on a salad, or as part of a charcuterie board.

Tips:

  • Ensure all utensils and jars are sterilized to prevent contamination.
  • Pickled eggs will develop more flavor the longer they are stored.
