- 1/2 teaspoon cinnamon
- 2 medium apples
- 3 eggs (separate the yolks from whites)
- 1 teaspoon vanilla extract
- 40 g dried cranberries (1/4 cup)
- A pinch of salt
Instructions:
- Preheat Oven and Prep Baking Sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare Apples: Peel and core the apples. Grate them using a fine grater and set aside.
- Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, cinnamon, and a pinch of salt.
- Prepare Wet Ingredients: In a separate bowl, whisk the egg yolks and vanilla extract together.

- Beat Egg Whites: In a clean bowl, beat the egg whites until stiff peaks form. Carefully fold the beaten egg whites into the cookie dough mixture. This will help the cookies rise and become light.
- Shape Cookies: Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake: Bake for about 10-12 minutes, or until the edges are golden brown. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
