Cabbage and Cucumber Salad Recipe

Ingredients:

  • 1/3 head of cabbage (green or white)
  • 1/3 head of red cabbage
  • 1/4 teaspoon salt (for green cabbage)
  • 1/4 teaspoon salt (for cucumbers)
  • 1-2 cucumbers
  • 1/2 onion (red or white, finely chopped)
  • 1 teaspoon rice vinegar (or apple cider vinegar)
  • 1 carrot (grated)
  • 20g walnuts (roughly chopped)

Instructions:

  1. Prepare the Cabbage:
    • Finely shred both the green and red cabbage. Place them in a large bowl.
    • Sprinkle 1/4 teaspoon of salt over the cabbage and gently massage the cabbage with your hands for about 1-2 minutes to soften it.
  2. Prepare the Cucumbers:
    • Thinly slice the cucumbers. Sprinkle with 1/4 teaspoon of salt and let them sit for 5-10 minutes. This helps draw out excess moisture.
    • After 10 minutes, drain the cucumbers and pat them dry with a paper towel.
  3. Prepare the Carrot and Onion:
    • Grate the carrot and finely chop the onion.
    • Add both the carrot and onion to the bowl with the cabbage.
  4. Add Cucumbers and Dressing:
    • Add the drained cucumber slices to the cabbage mixture.
    • Drizzle the salad with 1 teaspoon of rice vinegar.
  5. Toss and Serve:
    • Gently toss all the ingredients together until well mixed.
    • Sprinkle the chopped walnuts on top for added crunch and flavor.

Tips:

  • You can add a little olive oil or sesame oil for extra richness.
  • Serve immediately or let it chill for 15-30 minutes to allow the flavors to meld.
