Caramelized Onion Tartlets

Ingredients:

  • 4 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon sugar
  • Salt and pepper, to taste
  • 1 sheet of puff pastry (thawed if frozen)
  • 1/4 cup grated Parmesan cheese
  • Fresh thyme (optional)

Instructions:

  1. Caramelize the onions:
    • Heat olive oil and butter in a large pan over medium heat.
    • Add the sliced onions and stir to coat them evenly.
    • Cook the onions for 20-30 minutes, stirring occasionally. Lower the heat if they begin to brown too quickly.
    • Add balsamic vinegar, sugar, salt, and pepper in the last 5 minutes to balance the sweetness and add a rich flavor. Stir and cook until the onions are deeply golden and caramelized. Set aside.
  2. Prepare the puff pastry:
    • Preheat the oven to 400°F (200°C).
    • Roll out the puff pastry sheet on a lightly floured surface and cut it into squares or circles, depending on your preference.
    • Place the puff pastry pieces on a lined baking sheet.
  3. Assemble the tartlets:
    • Spoon the caramelized onions onto each puff pastry square or circle, leaving a small border around the edges.
    • Sprinkle a little grated Parmesan cheese over the top.
    • Optionally, top with fresh thyme leaves for an herbaceous note.
  4. Bake:
    • Bake in the preheated oven for 12-15 minutes, or until the puff pastry is golden and crispy.
  5. Serve:
