Salmon with Roasted Vegetables and Quinoa

  • Ingredients:

    • 2 salmon fillets
    • 1 tablespoon olive oil
    • 1/2 teaspoon dried oregano
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 cup broccoli florets
    • 1 cup cherry tomatoes
    • 1/2 cup quinoa, rinsed
    • 1 1/2 cups vegetable broth
    • 1 lemon, sliced
  • Instructions:

    1. Preheat oven to 400°F (200°C).
    2. Season salmon fillets with olive oil, oregano, salt, and pepper.
    3. Toss broccoli florets and cherry tomatoes with olive oil, salt, and pepper. Arrange vegetables on a baking sheet.
    4. Place salmon fillets on top of the vegetables and arrange lemon slices around the pan.
    5. In a separate pot, combine rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until quinoa is cooked and fluffy.
    6. Bake salmon and vegetables for 15-20 minutes, or until salmon flakes easily with a fork and vegetables are tender-crisp.
    7. Serve salmon with roasted vegetables and cooked quinoa.
